Sous Vide Spicy Quick Pickles
If you’re a fan of quick, no-fuss pickled vegetables, a sous vide approach offers a number of benefits. First, applying precise heat gives us total control over the final texture of our vegetables, as well as completely dissolving the sugar and salt in the pickling liquid. Next, because we’re using a bag rather than a jar, it’s much easier to cover the vegetables, meaning we can use less liquid.
