Sous Vide Pumpkin Puree

Yield depends on size of pumpkin

Cook time: 45 minutes sous vide


  • 1 Sugar Pumpkin – deseeded, cubed
  • 1 Tablespoon Butter


  1. Set Nomiku water bath and turn temperature to 85°C (185°F).
  2. Put cubed pumpkin in a bag with butter. Seal with vacuum sealer or using the water displacement method.
  3. Submerge in water bath and sous vide for 45 minutes.
  4. Remove from water bath and puree in blender or with an immersion blender. 
  5. Use puree for pies, pastries, sauces, or soup.
