Sous Vide Chicken Tikka Masala

Need a simple and quick meal that is packed with flavor? This sous vide chicken tikka masala dish is calling your name! It will punch you in the mouth (but nicely) with flavor and perfectly cooked chicken.

  • 2 lbs Boneless Chicken Breasts – cubed (about 2-3 breasts)
  • 2 teaspoons Garam Masala
  • 4 Garlic Cloves – chopped
  • 3 teaspoons Grated Ginger
  • 4 Pods of Cardamom – crushed
  • 2 teaspoons Coriander
  • 2 teaspoons Cumin
  • 1 teaspoon Red Pepper Flakes
  • 2 teaspoons Turmeric
  • ½ Onion – diced
  • 3 tablespoons Tomato Paste
  • 1 can Crushed Tomatoes
  • 2 cups Heavy Cream
  • 3 tablespoons Ghee (2 for chicken, 1 for sauce)
  • ½ cup Cilantro – chopped
  • 1 ½ tablespoons Sea Salt
  • Steamed rice

Sous Vide Chicken Tikka Masala


  1. Set up Nomiku water bath and turn temperature to 63°C (145°F).
  2. In a zip bag, add your cubed chicken breast. Next add in garlic, ginger, and all spices – turmeric, coriander, cumin, cardamom, red pepper flakes, and 2 tablespoons of ghee. Give your zip bag a good massage to fully blend the chicken with the mixture. Seal using the water displacement method. Sous vide for 1 hour.
  3. While the chicken is in the water bath, heat 1 tablespoon of ghee in a sauce pan on medium. Put in chopped onions and cook until brown. Add in your tomato paste, crushed tomatoes, and salt. Turn the stove to low and slowly pour in heavy cream while stirring. Let simmer until chicken is ready.
  4. Turn the stove off. Remove the chicken bag from the water bath. Pour the entire content of the bag into the sauce pan and stir until fully incorporated. Stir in most of the cilantro but keep a little handful for garnish.
  5. Plate and top with cilantro.
