Nutella and Marshmallow Infused Cocktail

 

Tis the season!

The air is cool and crisp, perhaps there is snow dusting your front porch, why not warm up with a festive cocktail?

Here at Nomiku, we are big fans of infusing and liquors and bitters to make signature cocktails. In this blog we have a few great holiday beverages to try and we encourage you to whip up something unique to you and your family.

Pine-Honey Spiked Apple Cider

Ingredients

  • 2 Cups Water
  • 2 Cups Honey
  • 1 Cup Pine Needles
  • 4 Cups of apple cider or apple juice
  • 2 ounces of bourbon
  • 1/2 cup apple brandy
  • 2 tablespoons dark brown sugar
  • 1 whole nutmeg, crushed (with the flat of a heavy knife or a pot bottom)
  • 15 whole cloves
  • 3 (3-inch long) cinnamon sticks
  • Zest of 1 orange
  • 2 star anise pods

Directions

  1. Set Nomiku water bath and turn temperature to 50°C (122°F).
  2. Put water, pine needles and honey into a zip bag and seal using the water displacement method. Sous vide for 2 hours.
  3. Remove from water bath, strain, and keep in a bottle—shelf stable for up to a year, store in a cool place.
  4. Next, set you sous vide water bath to 70C.
  5. Place apple juice, brandy, brown sugar, nutmeg, cloves, cinnamon, orange zest and anise pods into a gallon-size freezer-safe ziplock bag and seal using the table edge method (use gravity and the edge of the table to push the air out of the top of the bag and seal. Then place into the water bath and cook for 45-90 minutes.
  6. Remove from the water bath and strain the cider through a fine-mesh sieve into a heatproof pitcher. You can also use cheesecloth to strain or a mesh spoon to remove the spices.
  7. The cider is ready to get mixed with the pine-honey infusion and some bourbon. For every cup of sous vide apple cider, add about 1/2 ounce of the pine honey and about a shot of bourbon. Adjust to your taste and you can also chill and serve over ice.

Fennel Liqueur and Le Mistral Cocktail

Ingredients

Fennel Liquor “Pastis” ingredients

  • 200g Fennel stalks
  • 30g Caraway seeds
  • 5g Whole white pepper kernels
  • 2g Coriander seeds
  • 1L Vodka

“Le Mistral Cocktail” ingredients

  • 100ml Fennel liqueur
  • 50ml Simple syrup
  • 1 pinch Sea salt
  • 1/2 cup Ice
  • Fennel bulb garnish

Directions

Fennel Liquor “Pastis”

  1. Set up Nomiku and set temperature to 50ºC (122ºF).
  2. Add fennel stalks, caraway seeds, white pepper, coriander, and vodka into a blender. Blend for 2 minutes non-stop on high.
  3. Move to bag, remove air, and sous vide at 50ºC (122ºF).for 2 hours, rinse a coffee filter out with hot water (to remove paper taste), and strain through filter. Allow to strain for 1 hour.
  4. Pour “pastis” back in clean bottle and store in freezer.

“Le Mistral Cocktail”

  1. In an Old-Fashioned glass, stir the brilliant green fennel liqueur in with the rest of the ingredients for 10 seconds to mix and chill. Serve with a slice of fresh fennel bulb.

Caramelized Lemon Drop

Ingredients

  • 3 Lemons
  • ¾ Cup of Cane Sugar for Cocktail, Additional Sugar for Sprinkling onto Lemon
  • 2 Cups vodka
  • 3 Cups water

Directions

  1. Set Nomiku waterbath to 50°C (122 °F).
  2. Cut lemons in half widthwise and put on baking sheet. Sprinkle some sugar onto the flesh of the lemon so that it lightly coats it. Set oven on high broil. Broil lemons until caramelized and a bit burnt, about 4 minutes. Remove lemons from oven and allow to cool before handling.
  3. In a zip bag of vacuum pouch add the juice of all of the caramelized lemons, the rind of one lemon, sugar, vodka, and water. Seal. Drop in water bath and cook for 3 hours. 50°C will not break down the alcohol in the vodka and deeply infuse the lovely caramel flavor.
  4. Open bag and strain out liquid so that the cocktail is without debris. Serve in highball glasses with lots of ice or freeze them into a slushie pops.
